I purchased two pieces of frozen pork tenderloin that was on special at NoFrills for $2.99 a pound. Each piece was $1.99, so together they were just over a pound. I slightly defrosted both pieces in my microwave oven so that I could cut them in half, in order to fit them in my crock pot (slow cooker).

Here’s my recipe:

Pulled Pork Tenderloin Sandwich

Ingredients

1-2 pounds pork tenderloin
10-12 ounces of Root Beer
1 bottle of hickory barbeque sauce
4 hamburger buns, split, lightly toasted and buttered

Prepare

Place pork tenderloin in slow cooker.

Pour Root Beer over the pork tenderloin.

Cover and cook on low until well cooked, so that pork is easy to peel apart, 6 to 7 hours.
NOTE: the actual length of time will vary depending on your slow cooker.

Once cooked, drain pork tenderloin well.

With thoroughly cleaned hands, and a large bowl in front of you, pick up each piece of pork tenderloin and literally pull long strips of meat off, placing the strips of meat into the bowl… thus pulled pork. Any of the tendons left on from the butchering will come away easily making this a great way to cook pork tenderloin (though you can use other cuts of pork).

Once all pieces have been pulled and are in the large bowl, squeeze enough hickory barbeque sauce onto the pork tenderloin to make it sort of stick together in a mass. I found I had to add the barbeque sauce three times before I had enough.

Place the lightly toasted and buttered hamburger buns on plates and scoop the pulled pork from the bowl onto the bun. Serve with stir fried veggies.

Serves 4

Make sure you use hickory barbeque sauce the first time you make this. Ooooh my… is this recipe every yummy. I’m hoping my special guest will comment on this posting, so you too will know if my first impression stuff worked

I don’t know about you… but my after only my first viewing of the video, I could swore the gunman was shot AFTER he laid his weapon down. Obviously, I would have made an unreliable witness.

WRONG!

I was informed that it’s faster to chop veggies with a knife than fiddle with this piece of…. well, basically described as a failure of a contraption!

Apparently, when chopping an onion the pick that was supplied HAD to be used to retrieve the pieces… very few pieces actually dropped into the container… AND… when trying to chop a carrot, a way more force was needed to push the carrot through the plastic blades than is needed on a knife. Also, the carrot needs to be in “perfect condition”… and she felt certain that with “perfect conditions” met, using this “tool” to chop carrots with would cause the plastic blades to break in no time. Who’da thunk!

Silly me for trusting StarFrit… I tossed my sales slip… $19.99 + taxes wasted! Ask me if I’ll purchase StarFrit appliances anytime soon?

Early in December, I ordered three DVDs online… two for guitar lessons for children and one for drums lessons for children (total $62.12)… from sheetmusicplus.com and they STILL have not arrived. When I complained, this is what I was told:

On December 28, while shopping at my local SuperStore, I discovered Farmers Market mincemeat pies on sale for just under $4.00. I thought I’d made a great discovery… until I actually tasted it. What was labelled as mincemeat was merely a mixture of what appeared to be raisins and currents heavily laced with cloves, mixed in what seemed likely to be cornstarch thickened sauce… inside cardboard pastry. Thanks Farmers Market… you just saved me ever buying YOUR pies again; takes me a looooong time to get over the memory of bad tasting foods. Eh, think of the calories as well as the costs Farmers Market have saved me!

Makes me even more content that I did NOT purchase their pies and serve to any of my guests.

So… how did YOUR purchases for Christmas go?

The Law of the Garbage Truck by David J. Pollay

One day I hopped in a taxi and we took off for the airport. We were driving in the right lane when suddenly a black car jumped out of a parking space right in front of us.

My taxi driver slammed on his brakes, skidded, and missed the other car by just inches! The driver of the other car whipped his head around and started yelling at us. My taxi driver just smiled and waved at the guy. And I mean, he was really friendly.

So I asked him, “Why did you just do that? That guy almost ruined your car, and sent us to the hospital!”

That is when my taxi driver taught me what I now call, “The Law of the Garbage Truck.”

He explained that many people are like garbage trucks. They run around full of garbage — frustration, anger, disappointment. As their garbage piles up, they need a place to dump it and sometimes they’ll dump it on you.

Don’t take it personally. Just smile, wave, wish them well, and move on.

Don’t take their garbage and spread it to other people at work, at home, or on the streets.

The bottom line is that successful people do not let garbage trucks take over their day. Love the people who treat you right. Pray for the ones who don’t.

Ingredients

salt
1- 250g. pkg. fettuccine noodles
1 pork tenderloins (about 2 pounds), trimmed of connective tissue and silver skin
2 tablespoons Extra Virgin Olive Oil
1/2 cup plus 2 tablespoons flour, as needed for coating
ground black pepper
4 tablespoons butter
1 sliced pound button mushrooms
1/2 cup Marsala wine (do NOT substitute)
1-10 oz can of chicken stock
ground black pepper
3 tablespoons of heavy cream
1/4 cup flat-leaf parsley, chopped

Yields: 4 servings

Preparation

When all of the meat has been pounded out, place a large skillet over medium-high heat, using about 2 tablespoons of Extra Virgin Olive Oil.

Place about 1/2 cup of flour into a large casserole dish or pie plate, and season each piece of pork with salt and pepper, then lightly coat each piece of pork with flour.

Cooking in batches, sear the pork until golden brown and cooked through, approximately 3-4 minutes per side.

As the pork finishes cooking, reserve them on a plate covered with foil to keep them warm.

When the pork is finished cooking, add the butter to the skillet. After it melts, add the mushrooms to the skillet and cook them until golden brown, approximately 5-6 minutes.

Sprinkle the mushrooms with about 2 tablespoons of flour and cook for about a minute.

Add the marsala to the pan and cook until reduced by about half.

Add the chicken stock to the pan and bring the sauce up to a bubble.

Season with salt and pepper and simmer until thickened, approximately 2-3 minutes. Stir the cream and parsley into the finished sauce and simmer on low while you are boiling the noodles.

Through a dear friend, I learned of Rachael Ray’s recipe… and I have altered it considerably, to add more sauce and less meat. Watching Rachael’s video may inspire you to try this recipe… as it did me!
